Special equipment: Parchment paper is available at almost any supermarket in 15″ wide by 24′ long rolls.
2 10″ x 15″ pieces of parchment paper
2 crosscut pieces of salmon filet (skin off if possible)
1 Tsp dill seed
1 Tsp dill weed
4 1/8″ slices of lemon (seeded)
1 Medium tomato blanched and peeled or 8 cherry tomatoes (skin on)
1/4 Cup thin sliced white or yellow onion
1/2 Tsp garlic salt
1/2 Tsp lemon pepper (or groud pepper)
Preheat oven to 350 degrees with rack in the middle. Soften the onion in a small skillet in butter or olive oil and drain. Place filets in the center of the parchment paper, sprinkle with dill weed and dill seed. Line the sides of each filet with softened onion and tomato, lay a couple of slices of lemon on each filet. Apply salt and lemon pepper. Fold into nice packets and place on cookie sheet, folded side down. Cook for 25 minutes in preheated 350 degree oven.
Plate in parchment packet (cutting the top if you like) and serve on a warm plate. I enjoy this with new or small red potatoes, or if you really want to be healthy (and this dish is) serve with green vegies. You can vary this dish with lots of great things your family enjoys. As a ‘for instance’ I like to add asparagus spears to the packet. The only thing I wouldn’t vary is the dill. Enjoy
